1. In the greaseproof paper

This is a traditional chinese dish that is highly popular with kids and adults alike. Aromatic chicken pieces are packed into greaseproof paper packets and deep fried. The parcel seals the flavour of the meat and spices giving the diners a heady flavourful aroma when opened.
Ingredients
1. Whole chicken 1, cut into 15 chunks, or grounded
2. Ginger 3 tablespoon, shredded
3. Spring onion 3 stalks, cut into 3 cm pieces
4. Greaseproof paper Make into 15 pockets
5. Oyster sauce 5 tablespoon
6. Light soy sauce 2 tablespoon
7. Ginger juice 1 tablespoon
8. Sugar 1 teaspoon
9. Sesame oil 1 teaspoon
10. Shaoxing wine 1 tablespoon
11. Pepper 1 teaspoon
12. Water 1 tablespoon
13. Corn flour ½ tablespoon

Method

1. Combine ingredients 5 to 13, add chicken pieces and marinate for 3 hours.

2. Add ginger, spring onion and mix well.

3. Place a piece of chicken, some ginger & spring onion into each paper pockets and seal well.

4. Heat oil in wok, add in chicken parcels and deep fry for 2 minutes in high fire. Lower fire and continue to fry for 5 minutes. Finally, return to high fire and fry for another 3 minutes. Drain and serve.

2. Chinese Chicken in Foil Appetizers

Ingredients:
1 1/2 lbs boneless skinless chicken breasts
2 green onions, finely chopped
40 -50 pieces aluminum foil, cut into 5 x 6 inches
1 tablespoon hoisin sauce
1 tablespoon soy sauce
1 tablespoon sherry wine
1 tablespoon oil
1 teaspoon sesame oil
1 garlic clove, minced
1/4 teaspoon pepper
1 teaspoon sugar
2 teaspoons cornstarch

Directions:

1 Cut chicken into 1"x1" pieces.
2 Place in a shallow pan. Sprinkle green onions on top.
3 Mix all marinade ingredients together and pour over chicken. Marinate for 2 hours at room temperature, or overnight in the refrigerator.
4 Wrap each piece of chicken in a square of foil. Place in a single layer on a cookie sheet.
5 Bake at 450º for 12 minutes.

Ingredients for Paper Wrapped Chicken

1 small Chicken (about 1kg)
3 slices Cooked Ham
3 stalks Spring Onion*
2 Tbsp Chinese Wine*
1 Tbsp Oyster Sauce*
1 Tbsp Ginger Juice*
2 Tbsp Light Soy Sauce*
1 tsp Sesame Oil*
1/2 tsp Sugar*
Dash of Pepper*
20-25 Squares of Greaseproof Paper, 15cm x 15cm

How to make Paper Wrapped Chicken

Debone the chicken, remove skin and fat.
Cut the chicken meat into large chunks.
Marinade with seasoning ingredients* for 30 minutes.
Heat oven to 200C
Cut ham into 2cm x 5cm slices.
Brush one side of the greaseproof squares with oil.
Place a piece of chicken and a slice of ham onto the greased side. Warp into individual parcels.
Arrange the parcels onto a shallow pan and bake for 15-20 minutes.
Serve.
