Гутабы - азербайджанские пироги с творогом и зеленью очень вкусны и напоминают по форме чебуреки. Их пекут и с мясным фаршем, и только с одной зеленью, и с сырами, и даже с тыквой и другими начинками. От чебуреков они отличаются тем, что жарятся не во фритюре, а на сковороде с небольшим количеством масла. Как я поняла, ближайшие родственники гутабов Ближнего Востока - это кутабы из Средней Азии, которые жарятся на сухих без масла сковородах, а потом уже готовые поливаются топленым маслом. Думаю, что и так, и эдак вкусно!

Для приготовления теста просейте муку, добавьте яйца и воду.

Перемешайте ингредиенты лопаткой, смажьте руки растительным маслом и замесите крутое мягкое тесто. Прикройте его полотенцем или плёнкой.

Для начинки порубите лук и зелень.

Затем разотрите творог с зеленью, посолите по вкусу. Можно приготовить начинку в блендере или растереть и перемешать вручную.

Начинка из творога и зелени для пирогов готова.

Разделите тесто на 10-12 кусочков.

Каждый кусочек теста раскатайте в тонкую лепешку. Уложите на половину лепешки начинку.

Края теста соедините и защипните.

Жарьте гутабы на сковороде с небольшим количеством масла на среднем огне с двух сторон примерно по 3 минуты или до румяной корочки.

От себя:Начинку можно использовать самую разнообразную;с мясом,с тыквой,с картофельным пюре.Я использую более диетический и  лёгкий вариант приготовления гутабов. Жарю их на сухой сковороде потом смазываю маслом.
